Tom, coming from the cheap and non-audiophile end of things, I use these: [link] and like them a lot.
I have a pair of Altec Lansing headphones that I bought at the Apple Store and I don't like them at all. But they were the only pair under $100.
Techno hivemind question. If I have a DVD of a concert, is there any way I can download/extract the audio so I can load it as an iTunes playlist?

You want either Handbrake [link] or MPEG Streamclip [link]
Both of them have iPod settings for export.
Any rec or preference?
For the sort of things I normally do, MPEG Streamclip is more useful, but Handbrake is probably the more user-friendly of the two.
[eta they're free, so there's no harm in downloading both!]
