In the beginning, he talked about taking people apart, to see what made them tick. It kinda made me think that he needed to see the brain work. Perhaps he doesn't, now. In the beginning, he had to take the brain, now he just needs to see it.

Why do you say that? Have the brains been left with the bodies, or nearby? I haven't been good about noticing details in every scene.
That was a scary thing for him to say to Peter, "I'd like to see how that works."

I think it's always been about seeing "how it works" by looking at the brain. If he figures out Peter's dealio he won't have to open up the skull anymore. What we don't know about him is if he really gets off on murdering these people or if that's just a side effect of wanting the power.
