Maybe Bryan Fuller and Todd Holland (and Caroline Dhavernas and Katie Finneran) have spoiled me, but commentaries are the principal reason I buy or rent DVDs of things I've already seen.

I think they depend a great deal on the people doing the talking. Hugely meta or insightful people, one kind of commentary (e.g. "Objects in Space"); hilarious people teasing one another, a different kind (3/4 of the Farscape commentaries I have heard). Personally I prefer a good mix of "this is how we did that" and "this is why" and some funny stories.

(My gold standard for solo commentary is John Frankenheimer. Groups commentaries are a total crapshoot, as it turns out that people who make their living saying other people's words? Don't necessarily have any coherent words of their own.)

Okay, I'll admit that I loved the Family Guy commentaries. Which seemed to be about 90% "I can't believe we snuck this past the censors, and Seth Green, did you bring enough snacks for all of us?"

The group commentaries for ROBOT CHICKEN are hilarious because Seth is acting as a demented master of ceremonies (SMG pops in for several). Not quite as funny as the extras of him demonstrating for the animators how he wants the animation to look, but pretty close.
