I am lucky in that I get to set my own deadlines. It sucks when the scope keeps changing every time I think I've got it nailed.

We've had to threaten mass rebellion when they want to schedule a major software install within 2 days of a holiday. We got royally screwed on one that was done right before the xmas holiday. At one point, a boss told the developers that if they held that schedule, his staff would be instructed to not come to work that day, effectively making the install impossible.
