Yes, I agree that it is a shitty thing to do. However, I think the professor may feel he is coming from a valid POV. Whether he is or not? knowing vw, I don't think so.

He may; he may even be saying something perfectly decent (e.g., "I'm sorry to hear that you're sick, and concerned about how you'll be able to handle it.") in a completely foot in mouth way.
Takebacks when he'd already allowed a makeup, otoh, is pure shitty whatever the motivation.
