Why are there Mondays? Especially when I didn't have a Friday (supposed to be a paid holiday, but I worked) or a Saturday (worked again) and the Monday was supposed to be a vacation day (but, yep working again)?

I think OotP will be easier to adapt because even though it's so long, there are fewer Big!Major!Scenes! -- the problem with GoF is that the structure of the tournament means you HAVE to have a major action scene every 10 minutes. There's just no getting around it.
