What is even happening?

I don't eat liver. But I use onions almost every time I cook and I love spinach and eat it alot.

I don't think the onions have iron, maybe, but I think they do have vitamin C, which either helps with iron metabolism, or screws it. I'd dig out my nutrition text, but I'm too lazy. At any rate, the onions are just the garnish for the liver, which is chocked full of iron, but also is organ meat, and so is big on cholesterol. It's a trade off.

Spinach is good, though.

My dad takes a VERY high dose of niacin for cardioprotection, and it makes him flush, not painfully, but pretty intensely.

You can get non-flushing niacin. The first time my mom's partner took niacin and flushed, he thought he was having a heart attack. Fortunately, my mom pointed out the niacin, and told him about the non-flushing option for the future. Then, he decided he kind of liked the flush, so stuck with the regular stuff.

Spinach is good, though.

Oh, yeah. I add it to omelets, spagetti sauce, make salads of it. There's so many places it can be used. I go through a bag of spinach a week.
