I would use the white and pale green parts, they usually specify if they want you to use the darker green parts.

Minced is just finely chopped. Thwack at it a while with a kinfe = minced, to me.

Timelies all. My headache from yesterday appears to be returning. Damn it. I did have a very nice 4th of July picnic gathering at my mom's house, which was tasty and friendly, and normally I would be seeking fireworks now...but with my head returning to its previous state of earth-shattering pain, fireworks sound like pure torture.
