Love interests tend to get cast by the hotness of the actress' looks. Quirky supporting characters tend to get cast by personality and acting ability. The latter are almost always more interesting than the former, though not necessarily more popular.
I checked imdb and the chick who plays Lois will be 28 this year. And she looks it.

I would have thought if you were going to go with someone who had a physical appearance different than the classic depiction of the character (dark eyed brunette versus light-eyed redhead) it would have been after seeing a bunch of different actors and deciding that this one was right for the job, physical discrepancy aside.

That's the thing -- she is very pretty, and the character's very nice, but... at least when I was watching, it seems like that's all they'd thought of for the character -- "Let's make her pretty and really nice!" That's not a character.
