I would have hated Mal's guts if that scene had been left as it was.

I love it, personally. Micole mentioned it in one of her LJ posts about the movie, and it made sense, because otherwise, why would they have Book's body with them at the end to bury?
ETA: Unless it's a joke, actually. I can't really tell from the gag reel.
Not just the bit about Book's body but his words and attitude as a whole during that scene. From what others posted here earlier, it continues after the point of the flub in much the same vein. The scene in Serenity is painful, but we understand where Mal is coming from, how far he's been pushed, but the Mal in the original scene is unnecessarily cruel to his crew. Just the bit that was on the gag reel upset me and I knew it wasn't "canon". Had that occured officially, it would have likely changed some of my feelings about the movie.
