I've seen it three times, counting the advanced screenings. May see it again this weekend when I'm visiting my folks and I'm supposed to see it with a friend of mine who borrowed my DVDs at some point when both our schedules are free.
Three times, which ties the record for number of live viewings of a currently-released movie for me.
Same as Theodosia. ETA: Oh, no, actually, I didn't read carefully. It's not a tie for me. It's the most times I've seen a currently-released movie.
The LotR movies took me up to four during current release. I have no concrete plans to see Serenity again, although I wouldn't mind escorting other friends.
My in-theatre (though not current release) record is fifteen or twenty. When The Princess Bride meets rep theatres and university screens (I only saw it twice in first run), it's a beautiful thing.
I saw the original Star Wars five times in the theater when it first came out. That's been my record all these years.

There are a whole bunch of movies I've seen three or four times in the theater.
I saw Amélie six times in theatrical release because I was crazy about it, and Pulp Fiction six times because I was the guy several different friends were determined to see it with. I think that's my record, although I've watched Ghostbusters on cable and broadcast TV every time I've run across it (stopped counting with viewing #24).
I tried watching The Princess Bride on TV, but they trimmed the lightning sand scene, so I stopped. My sister called and complained about the same snip, and turns out she stopped watching too.
The few movies I've seen more than twice in the theater were usually due to friends who wanted to see it with me. (Spiderman and Pirates of the Caribbean) If someone really wanted to Serenity with me again I wouldn't have any problem with it, but there are just so many other movies out there right now that I want to see for the first time that I doubt I'll get to Serenity again before it leaves the theaters.
Between being unemployed and toddler-having, I'm just not in a place to see movies twice these days. I've only seen 3-4 movies in the theater in the last 12 months, and the fact Serenity makes the list says a lot.
(Lest anyone think I'm living in grinding poverty and misery, it's all about choices. We'd see more movies in the theater if we gave up cable and our 16-game plan at the ballpark, I'm sure.)
Last night was unplanned. I was having dinner at a Thai place in Evanston, looked at the clock, and thought, "I could just walk over to the theater and see Serenity again...."
