I think there's a big difference between the most visible portion of a fandom and the overall fandom. Online Stargate fandom skews female, for sure. But in terms of Nielsens and DVD sales? I'd be a lot less sure.

Online fandom is probably the bulk of the preview screening audience for Serenity though, so there's probably something similar in effect. I bet if Lucas had done extensive preview showings of RotS the audience would have skewed mostly male.
