Another oatmeal cookie recipe. My mother's oatmeal cookies are the One True Cookie. These are crunchier cookies with a higher proportion of oatmeal.

Mother's Oatmeal Cookies

1 cup butter
1 cup white sugar
1 cup dark brown sugar
1½ tsp. vanilla
2 eggs
1½ cups flour
1 tsp. soda
1 tsp. salt
3 cups raw (not quick cooking) oatmeal
1 cup chopped dates
1 cup chopped pecans
1 cup butterscotch or chocolate chips (optional)

Preheat oven to 350 degrees. Sift together flour, soda and salt. Cream butter. Add white and brown sugar. Blend well. Add vanilla. Add eggs; beat well. Add sifted flour mixture. Fold in Oatmeal, raisins and nuts. Drop from teaspoon onto greased cookie sheet. Bake at 350 degrees for about 12 minutes. Makes about 8 dozen cookies.

Not looking at shelters sites. I tried volunteering after I got Devi. Yeah, I'm a big marshmallow and only pure finances prevented me from bringing them all home. Felt like shit for feeling like shit. And then, of course, there is Mister Kitty's sob story. So I write the APSCA and the local shelters checks now and then. And wait for more space.

Everyone is doing cookies. I'll do green chile faux posole with my horrid measuring skills. Cause I WANT it now:

1 box. Or one really tall can. chicken broth
About equal water.
toss in 2 or 3 or 4 large spoons of fresh compressed oregano (or, you know, that stuff that's dried or in a jar.) And maybe some pepper
Saute about 2 large diced chicken breasts in a pan with large (a couple of cloves?) of garlic.
In the pan you did the chicken, saute about 2 diced onions until the onions start getting translucent. Toss into pot of broth with chicken.
Add something short of a pound of roasted & chopped green chile.
Add 2 regular cans of drained hominy.
Shred 3 or 4 corn tortillas and throw those in as well.

Simmer for 45 minutes or until hominy has the "right" texture (some like it mushy, I like some resistance.)
