Current speculation is that Hurley being the "nice" guy who kills someone would have maximum dramatic impact. Also, that the producers LIED to us when they said there was nothing icky between Shannon and Boone.

Then again it was Wrongda that specified "he," so it could easily be Sun that snaps and offs Jin for one too many commands to button up a sweater in 100° heat.

I'm pretty sure one of the producers made an "incest, nay!" comment on The Fusilage, but I couldn't begin to point a link toward it.

I suppose that's possible, though many (including me) would still regard it as incest unless their families merged after they were adults.
