I agree with Amy. Tim can do wonders in 42 minutes of pulling you in and tearing you holes in places you didn't even know you had.
Joss does the slow creep of doom, the drums just lower than you can hear, but still you go into the dark forest.
Tim'll make the daylight hurt you.

When Angel and Darla have the knockdown, dragout fight before The Sex Of Pure Despair (or actually, before they start to fight). I loooooove the way he kisses her.
I've always called it the "Mad Crazy Vampire Sex." I loved the mad crazy vampire sex.
There are so, so many moments that I love. Too many to mention, but really almost any scene with Angel and either Darla, Holtz, or Connor was just fantastic. (Ditto for any scene with Wesley. Wesley just reading a book is better TV viewing than anything else on the networks.) For the shear pain and tragedy, Angel and Connor's shopping mall scene in Home is my favorite moment.
