Put the stuff for your guests out in whatever pretty bowls you have, and leave a bit of goodies in the bags and jars they come from, and Nilly will fill her plate from those. Easy peasy.

Nora, have both the glass bowls and throw away paper plates/bowls available, and then ask Nilly to get the kosher goodies ready. That way you don't need to keep worrying, she knows that they are prepared/set out properly, and everyone is happy.

Nilly misses me! I miss her, too. I'm feeling irrationally protective of her, too. Not that Nilly can't defend herself, of course. She's a strong, audacious, wise young woman.

Nora, the most important thing to do is not worry. Nilly knows what needs to be done, and will make sure it is done that way. We all did a freak out in one way or another, and none of us really needed to.
