I made veg hash with fried eggs on top and it tasted really good. Since I have a good non-stick pan I only used a tablespoon of olive oil to cook the whole thing. (So I don't feel guilty because I didn't poach the eggs.)
NYT had a similar suggestion for cleaning out your crisper bin, and I'm trying to be less carby/more veggie.
I had broccoli, red onions, summer squash and zucchini chopped up small and used paprika and a bunch of other peppery things to bring up the flavor. Properly seasoned, of course. Keeping Samin in mind I did hit the veggies with a bit of lemon juice.
Anyway, vegetable and protein success!

I'm feeling exhausted today and I don't know why. I slept in! I went for a walk and it's gorgeous out! I did not get my hair cut, which I do need to do. But mostly I want to nap.
