It's far too cold for May here.
It's like frickin' early March here.
Jesus, I mowed the lawn today in long pants and a long-sleeved shirt. I had to wait until about 3 p.m. for it to get over 50 degrees (I am a delicate flower and I get cold easily).
The local burger chain offers panko-breaded lightly fried asparagus with garlic aioli for about a month every year. I....got some today, and also yesterday. ;) It is so delicious, and I feel like I haven't effectively eaten my greens over the last two months. So I'm making up for lost roughage, I guess!
It is 85 degrees in Portland this afternoon, but fortunately, a significant wind factor has kept things from being unbearable. Next week it is supposed to rain the whole time, so I'm enjoying it while it lasts.
I washed a sink full of dishes and added yogurt to my meal plan. Does that count as two accomplishments? Two more than I expected today, tbh
That's totally two accomplishments!
Definitely two accomplishments!
I decluttered (three trash bags!), got rid of a bunch of cardboard, vacuumed and shampooed the basement and living room, washed dishes, and cooked dinner.
I made pork fried rice, using leftover Cuban pork, leftover rice, frozen mixed veg, and a leek that I hadn't needed for another dish earlier this week. Following some online advice, I cooked it on a higher heat than usual. The rice ended up with crispy bits, as did the veg. I was really happy with it, especially as it kept a fair bit of food from going to waste.
Gudanov's list of accomplishments for one day is like two weeks for me. Impressive!
Today I jogged around the neighborhood, got unreasonably cranky at a driver who rolled through an intersection and somehow missed seeing me in the middle of the road, read a book, did a little laundry, made pastry cream, and now I have a pot of Helen Rosner's Roberto soup on the stove. (I had to sub in bratwurst and bok choy for the Italian sausage and kale, hope it works.)
I have to say it's almost identical to Mark Bittman's "cassoulet" but with fewer veggies and beans.
Mmm, y'all dinners sound good and days productive!
I'm having bacon, chard, and amaranth for dinner. Sautéed the bacon to crisp it up a little, stirred the chard stems into the fat to soften up a little, stirred amaranth into that mixture, water, chard leaves on top to steam. In instant pot on rice setting. Should be done soon. I think I might watch Dead To Me while I eat...
