I loved it too, much to my surprise.
It wasn't all dumb yucks and I liked that the characters are actually nuanced.
I crowed when the hero move turned out to be very similar to a solution I came up with when I played the Serenity RPG.
I will definitely be watching.
Okay, that's weird. My DVR taped for two hours but the show was only an hour long. The second hour on my DVR was the Simpsons.
Is it worth watching in a universe where Galaxy Quest already exists and Seth MacFarlane's sense of humor frequently sets my teeth on edge?
If you're a Trekie and will get the jokes, possibly yes. If not, probably not.
I channel surfed into it and stayed to watch for Victor Garber, but when the alcoholic helmsman started intentionally mishandling their shuttle I tuned back out.

Seth McFarlane is a misogynistic asshole. Someone once pointed out that there was an act of violence against a woman in every episode. I had long since stopped watching, but I tuned in because I thought it was an exaggeration. It was not.
I saw the first few minutes of the show. He always goes for the cheap joke (i.e. the alien "ejaculation"). Also, I was extremely annoyed by the peak white male privilege of him getting written up six times for being at work hung over and not just not getting fired, but getting a starship. I couldn't keep watching.
