I don't know that answer, but I do know that Stella Parks on Serious Eats recommends using sugar to blind bake because it caramelizes the sugar for next time you use it and makes it more delicious.

I'm pretty sure this pie is going to come out a "gommel" as my grandmother and her mom would say (a bit of a disaster). We always thought it was an Irish word but I've asked bative Irish speakers (& bakers) and they looked at me like I was nuts.

In Good Eats I believe Alton Brown said to dispose of the beans after blind baking. I don't remember why, though.
