What differentiates a InstantPot from a regular slow cooker? I've almost decided to get a sous vide cooker for my brother and his other half. Does anyone have a preferred model/brand for that?

It's a combo device -- it can work as a slow cooker, pressure cooker, rice cooker, (sometimes) yogurt maker, and so on in one device.
Plus, according to the recipes I've been looking at, you can sauté things in it?

The Instant Pot is primarily an electric pressure cooker. It has a rice function (for plai white rice but you can cook other types on manual) . You can make yogurt with it, cook stews and soups, roasts, even bake. Cheesecake is supposed to be amazing in it but I haven't tried cheesecake.
I have one. It does take time to come up to pressure and release pressure but the food tastes like it cooked for house and roasts and stew meat cones out tender.
I made carnitas with a Boston butt and used a spoon to scoop out the meat.
Also you can cook frozen things. I've made beef stew from frozen beef and cook frozen chicken breasts.
I love the "will it sous vide" series on lifehacker. Have been thinking of buying my BIL one but not sure if he'd be into it.
