I do all kinds of cheap cooking for variable tastes.
My back up, don't-want-to-deal-with-dinner, is usually something like pot-stickers from Trader Joe.
Matilda *loves* rice and beans, and that's as easy as can be. Especially since I always make extra rice when I cook it so there's usually something to reheat.
Which also makes fried rice variations easy.
Quesadilla allows me to cook to order for various tastes and I can usually use what's in the fridge.
Which is why I often pick up a roasted chicken once a week, so I can add that to a quesadilla or throw some protein into various other meals.
Also use the picked over carcass when I'm making my lemon/orzo/chicken soup.
Making a Spanish tortilla is pretty tasty and not that complicated once you get the hang. Basically a frittata married to hash browns.
Oh, and one of my big cooking revelations in North Beach is that you don't need to make a sauce, but you can just sautee what's handy and toss it over noodles for your pasta dish.
And it helps to use pasta like Fusilli because it has a bit more mouth feel and better to chew.
Tuna and hard boiled eggs on salad make them meals.
Honestly. I noticed last month that my gas bill seemed awfully high, but it has been cold and etc. But then this month, it was even higher! So I finally went to look online, and I apparently did not set up the auto-pay when I changed banks. Oops. At least that should be taken care of now, and my gas won't get turned off....
Oh also, at my supermarket, they sell the rotisserie chicken picked off the carcass, which I think sometimes is even cheaper than the whole chicken, which is also often cheaper than a raw bird. I realize that's because it's getting close to too old to sell, but if you're just going to take it home and eat it, who cares.
Costco does that too, with the rotisserie meat.
I've also recently discovered the marinated baked tofu as a quick and tasty add in.
Cheap and easy: Chicken parts in the slow cooker with a container of salsa until the chicken is falling apart. Serve over rice or strain it a bit and serve as tacos etc. I added a squeeze of lime and some cotija.
For a variation, I've done a hunk of pork with a jar of salsa verde.
Too many ideas for meals! I am a compulsive recipe collector. And yet I still end up winging it. Last night I made a vegetarian alfredo lasagna and it was lovely and super quick and easy. TJ's no cook noodles, jar of alfredo sauce cooked with a bag of riced cauliflower and some veg broth, bag of broccoli, bags of shredded cheese. Layered and baked and then yummyness. Fresh strawberries and pineapple for the side.
ION, my son is interviewing with Tesla right now!! Or in 5 minutes. His GF's boss asked her if he might be interested and they both said hell yeah.
That's cool. Having Tesla on the resume will be great in the future too.
I often cook potstickers with frozen broccoli. One pan, ready in about 15 minutes, super easy.

I'm all about low effort cooking since I'm usually pressed for time. Pot roast is great for that. I usually make mashed potatoes with that and I can clean the kitchen while the the potatoes boil and the gravy simmers. Corn is pretty easy to combine with that since it doesn't involve much once shucked. Tacos are pretty quick and easy. Doing a ham steak with mac and cheese (what my daughter really likes) is an easy one. Doing a cranberry-orange spicy stir-fry can be quick if I have the chicken or steak marinading from the night before.
Exasperated with Mac's teachers. 2 weeks ago he was failing 4 classes. Two of them his grade was in the 30s. He has been allowed to turn in late and super late work, possibly even allowed to redo tests, who knows. Basically they have allowed him to do whatever it takes to get his grade up to passing. He now is only failing one class. 70s in the rest. Clearly passing the kid is more important than anything else. I think I am going to write the principal.

Without a doubt. The current bureaucratic system punishes the teacher for a failing kid so they will pass one way or another.
Now awaiting about a million FB messages from son and GF about the interview. For the last week she has been tutoring him on Tesla history, bought him clothes with the popular logos for the environment, and generally prepping him for a super entry level position. She has been there a couple years and has advanced several times. When she started they had to give her a waiver because she was too young to be allowed to even test drive the cars per corporate policy. She is a huge fan of her employer, and the rise in her stock hasn't hurt her opinion any.
