The latest is that dairy fat is good for you!
Cheese for the win! I knew cheese would never betray me.
I cannot eat ground beef unless it involves a LOT of cheese or is part of a hamburger. What my mother did with ground beef haunts me still. Ground beef, elbow macaroni, and stewed tomatoes. Dear god, just reading that combination makes me bilious. She called it slumgullion, and I concede that she grew up poor in the Depression, but by the late 60s I would think she would come up with some variant on the food. And burnt-offering pork chops. Poor woman, she never really did learn how to cook--though her fudge and meatloaf were celestial. And she could make divinity from scratch.
Timelies all!
My mom made a basic tuna noodle casserole with noodles, cream of mushroom soup and tuna. It was layered.
I now want tuna noodle casserole (childhood comfort food!), and I'm pretty sure Pete would be horrified by it. Which is hilarious, coming from a man who grew up eating mushy peas from a can.

Add chopped onions, black olives and cheddar cheese to that and it's one of my favorite meals. Also from I Hate to Cook. The recipe bible of my childhood, frankly.

I have had a TON of full fat dairy this pregnancy because it is one of the few indulgences I can get away with as part of my Gestational Diabetes diet, and I have only gained 4 lbs the entire pregnancy.
That was DH's grandmother's kugel, too, Burrell.
That is very cool -t, most people give me a confused look when I say that I don't like sweet kugels because sweet kugels are all they've ever known.
Connie, my mom made something similar to that which she called goulash, but my mother's recipe was delicious. It included elbow macaroni, ground beef, kidney beans, and a stew of canned diced tomatoes, onions, carrots, celery garlic, and lots of olive oil. She was an amazing home cook. I've made that a few times too, and it's still delicious.
I also agree Scrappy's turkey and toast sounds very tasty, especially for the effort required.

This with white beans and grated cheese is one of my favorite comfort dishes.
Maybe it's a Litvak thing, Burrell? Salt of the earth.
I eat tons of full fat dairy because Atkins. But not noodles, although shirataki noodles are no carb which is very exciting for me. I love noodles so much. Whenever I was sick, DH would go get me some kind take out with noodles in because noodles are inherently comforting.

Wow. Pregnancy weight gain seems so random to me. Some women gain 50 pounds, some only 5. One friend I know lost 20 pounds during one of her pregnancies. I can see why my OB recorded my weight but pretty much ignored it and focused on whether or not the babies were growing, not me.

My mom called that goulash. I liked it well enough. Of course, by the time I was old enough to pay attention, she had learned to make a wider variety of foods, and we probably only had that once a month or so. Also the stewed tomatoes were not from a can, they were tomatoes from our garden we'd stewed and put up in the freezer.
