Ugh, that gave me some bad work flashbacks.
My Mom made delicious tuna casserole--classic egg noodles, cream of mushroom soup, canned tuna. She also usually put walnuts on top because, like me, she thinks everything is better if it's a little nutty!
We had yummy dinner last night--grilled lamb steak sliced and tossed with a parsley/mint pesto I'd made a while ago and froze, grilled corn on the cob, grilled green beans, potato and yellow squash casserole. And I made a stone fruit and blue berry crisp in the cast iron pan for dessert!
I'm trying to wake up earlier so I can get ready to be in the UK next week so this morning I went to my friend's 6:30 yoga class. Now I REALLY want to nap but I'm going to try not to. Or at least try to get something productive done before I nap. I really want to nap.

I have packed all the soft foods and all my meds. Now if I can manage to get dressed I will have no excuse not to go to work.

Make sure you are cooking in plenty of boiling water and start checking for doneness a couple of minutes before the suggested cooking time on the package.
I'm not sure why my mom used canned cream of mushroom soup for tuna casserole but always made mornay sauce from scratch for her mac & cheese (also, very delicious). I'll have to ask her!
I have no excuse not to go to work. My commute is 12 steps. I would like to take this morning off, though. We were short-handed at the restaurant, and I ended up working from 5 to 1 am yesterday. So now I'm achy and exhausted, and Monday is already being Monday.
