I remember the enchilada conversation, but I don't recall which thread -- sarameg was talking about how in her part of New Mexico, layered is just the normal way of having enchiladas, but everywhere else it gets called an enchilada casserole... if you don't have any luck finding the convo, maybe that would be a reasonably googleable object?

My arbitrary Passover thing is that I'll eat rice, but I won't eat rice noodles. I have no explanation for this, other than that noodles on Passover just feel wrong.

Gotta go with your gut. I, on the other hand, have been happily eating kosher-for-passover noodles for several days. I have no idea what they are made of, but they sure made lunches easier.
