Dinner tonight was butternut squash Flatbread with thyme and cheddar and it was very good.
I have a recipe for butternut squash enchiladas, which are a bit more time-intensive than this flatbread, but really good. I'm bookmarking the flatbread recipe, though, because it looks pretty tasty.
It is really good. I love butternut squash anything, but this was easier than many recipes. Though it really does need to be thinly sliced so the pre diced grocery store stuff won't work sadly (though I am too cheap to go that route most of the time anyway).
It is a LOT of cheese. Really, it is a pizza without sauce. But I get why they don't call it that since the flavors are definitely not traditional pizza.
House hunting is going forward. Looked at 4 places yesterday with no winners. Scheduled to look at a couple more tomorrow.
I need the hive mind on one of them. It has solar panels, which I like in concept but know nothing about in reality.
They're playing a long game. Saying to themselves "to catch a lizard, we must think like a lizard. What do lizards like to do? Lie in the sun..."
I hail you as a visionary. I anticipate a conversation with my supervisor in the near future where the phrase "BUT WE'RE NOT PAYING YOU TO CATCH LIZARDS!" will make an appearance.
Suzi, it depends entirely on how the solar panels were financed. You need to find that out - if they're leased or owned, etc.
Traveling with the kid is horrible for food. I had nostalgia places planned that mostly fell through. we had fast food today for lunch and I feel like there is a brick in my belly. I'd rather not just go to a chain place, but a good place is a mess with him, he doesn't want cheese mixed in his mashed potatoes, or garlic on his whatever, and blah blah fancy cakes reduction blah blah.
so 2 scary things I've done this trip.
1) typed in a NORTH street address as SOUTH which took us directly toward the Mexico border after dark last night and then along the border highway which is scary at night and THEN into a neighborhood without streetlights. - figured out the error and got to the hotel fine, but yowza.
2) took off for Carlsbad Caverns early this morning, still dark, and just trucked on out of town, not even thinking about gas, because I NEVER THINK ABOUT GAS BECAUSE I LIVE IN THE BURBS. We had half a gallon left in the tank when we got to the ONLY gas station. It is 130 miles between stations where we were.
Is there any reason to bring my medical insurance card with me overseas?
