Roaring Forties blue is my favorite, but I'm also fond of feta, port wine, smoked cheddar, and pecarino romano. I've also had a delicious aged gouda that a co-worker brought by the office, but I've not found that same variety.
Cabrales tastes almost as good as Roaring Forties, but it smells almost as bad as limburger, so I don't buy it for home use.

CJ's name sign is one hand cupped to the side of the face next to the eye, like horse blinders. And yes, that is the meaning behind his sign - the cupped hand is a C and the association with blinders is cause he needs to pay attention.
