Allspice could work, or maybe nutmeg? Or add a little lemon zest and go for more of a coffee-cake flavor than apple-pie.

I like the nutmeg solution. Does she not like cinnamon at all, or can you put in a hint? Maybe fresh cinnamon would make a difference (freshly grated?)

If you ever do need castor sugar for something just whir some regular sugar in the blender for 15 or 20 seconds.
