I made pork Thai meatballs last night. I put a couple of them in a lettuce wrap and topped it with peach salsa for breakfast this morning.

I'm making homemade Turkey Helper (Okay, tomato sauce with turkey meat and macaroni). I bought a garlic chopper in Vermont -- a little gadget that you put the peeled cloves into and push down on a plunger a couple times. To my amazement, it actually works -- I now have as finely chopped fresh garlic as you could want.
Have been coughing and sneezing since Sunday night. Everyone has been helpfully telling me that I look like shit. Well, I have no more sick days, so suck it up, I'm coming to work to infect you all.
Thanks, Jesse. I may try brining. I've enjoyed pork when others make it, so it would be nice to be able to cook my own.
I vote for a pork roast as being the best, but it's unwieldy for one person.
Roast pork is delicious, and does well cut into individual portions for later and frozen. Mmm, maybe it's getting to be time for me to pick up another pork tenderloin and do the CI version of char sui again. So yum.
Meanwhile, my dinner was just two hot dogs, a piece of brie, and two carrots. Because that was easy. Pretty good, actually.
Today I just want to not have to work and or maybe have a extended period of time alone.
Realizing that, really, I would prefer not to have to work, or not to have to work full-time, has inspired me to try putting a big chunk of my paycheck into my 401K and just work on budgeting around that, see if I can make that dream of doing nothing come true. Er, not meant as a suggestion for anyone else, just remarking on the coincidence that I filled out the paperwork today and hears an opportunity to mention it, I guess.
So, I'm living hand to mouth. My last rent check bounced because landlady waited three weeks to cash it. I email to say these are the days I get paid, cash the check then. She still waits, and the second check bounces. Cash that shit immediately, yo! Next rent check is going to be a cashiers check. Filling up my gas tank can ensure that I don't make my rent. Getting groceries can. This is such an unfuckingtenable situation.
