Seriously, if you have a mandoline, the prep takes ten minutes, and a couple of weeks later you have sauerkraut.
I don't have one, but I can deal, because I will start small.
Started out super stressed this morning, and it has eased with each passing couple of hours. I think some tea when I get home, and I'll be good. Lots of other stuff would work, too, but tea is what I've got.
