Kate, do you need to massage the kale or something?

I don't think you have to, but it wouldn't hurt and is pretty easy. After you cut up the kale, pour a little (maybe two tsp, or more if you have a lot of kale) olive oil & lemon juice into the bowl and work it into the kale with your fingers, just to make sure most everything is coated with the oil. It does help to take the edge off the bitterness of the kale.

The other thing I like about kale salad is that it keeps much better in the fridge than lettuce- or spinach-based salads, because the leaves don't get all gunky overnight.

I think my cold is worse today than yesterday. Bleh. Good thing my parents are here to help keep the kiddo occupied, since I'm not much help in that department at the moment. And I'm about to head out to choir rehearsal. Wish I could skip, but I already have to miss tomorrow's rehearsal, and our concert is Thursday night (!), so off I go. (I'll stand in the back so as to minimize the chance of infecting anyone else.)

FOURTEEN! 14!!!! bags of leaves. It was 3 of us, and my neighbors had finished the alley when I joined them, but still. Insane.

Don't know if I'm going to get to baking today. Gotta hit the pool soon, laundry and I still need to get some ingredients. Might have to bake during the week. Uh oh.

Theoretically, I now have super deluxe insurance for about $250 less than I would have paid for less deluxe insurance without the ACA.
