What percentage do you use?
Usually 1-2 cups, depending on the size of the recipe. I aim for about 1/3 oat flour, but I'm not going for low-gly, just tasty.
Speaking of cookies, my sister just emailed me a seriously decadent looking recipe for Brown butter salted caramel snickerdoodles. Forget about low-gly, this looks like a sugar coma in the making.
well crap, it is becoming clear that I have more work than I can finish today. And it looks like the weather tonight will not hit us anyway, so no real chance of getting an extra off. poop.
At least I have cranked out a good chunk.

Woo, there's nothing like being the only subject-matter expert who isn't on vacation this week.
Well, it was just a screening interview with a recruiter. Went okay. Guess I'll hear something in a week or so, if they want to bring me in to talk to a hiring manager.

It is the time of bliss in MyCompany Tech Support--time to breathe between calls, actual lunch hours, good odds of getting off at the scheduled quitting time. The extra stuff to keep track of is up to date, not quite so many catastrophes in the land.
From here until January is my favorite time of year.
