Cass, a chess pie is basically a custard pie with cornmeal in it. The recipe I use also calls for lemon, so you get a simple pie with a real nice texture and some lemony tang.

That sounds really delicious.

The original version has apple cider vinegar to cut the custard a little. My pie shop usually has the lemon, the vinegar, and one or two varieties they come up with.

Chess (with vinegar) is my favorite pie. The source of the name is disputed, but most food historians believe it's derived from "lemon cheese," an old English name for lemon curd. It's popularity in the South probably comes from the fact that it keeps at room temperature and doesn't require hard-to-get ingredients.

OK, here's a ridiculous question: Should I try to sell the cat carriers and other misc. I have, or just give them away? Probably it's ridiculous because I should just give them away if that's even an option, but I would not mind the money.
