Y'all I need some advice!

Setup: Beau has strange eating habits. He prefers mostly to eat one meal a day, but he will eat something lighter around lunchtime. His druthers in general are not to eat before noon.

When we visited my parents last year for Thanksgiving, we went to a buffet style restaurant. My parents are well into their 70s and prefer to be first in line at the buffet. Which means dinner is served at noon. Beau will eat something then, but not a huge meal. I eat more than he does (I am hungry in the mornings), but not a HUGE meal. I prefer 3 meals a day, though I usually eat 2.5 meals a day.

My mother is concerned that Beau isn't eating a lot, and that we need more to eat in the evenings - which is true. For a variety of reasons, I can't eat just one meal at noon at be done for the rest of the day unless it is a zombie apocalypse or something and I don't know where my next food will come from.

It also isn't great for my blood sugar to chow down like that at noon and nothing else.

They aren't budging in terms of T-day at noon, but now I don't know what to do on my end. We could find another place to eat, but I suspect most places close early for dinner (I could check into it though). It seems to me my options are:

a. go to their place the four of us, eat what we need to, and then figure out something in the evening. offer to pay so they don't feel like their $$ is wasted.

b. go elsewhere, but I need to eat in the morning, so I would still need to make myself something at some point.

c. cook a meal myself. "c" is not my favorite option (my mother probably won't want me messing up her kitchen), but I suppose I could do that if it comes to it.

Are there options I am forgetting. Hivemind, help.

I should note, I will talk this over with Beau, but he has had MAJOR drama with his family about Christmas, so I'm afraid he is just going to say "fuck it" if I don't talk to him with some solid options planned.

So, my wee kitty Bella, my Little Miss Melancholy, is acting weird. She's off her food (which happens, like, monthly) but she's sitting funny and walking funny. She doesn't seem to want to sit all the way down, she's just kind of crouching. When I pick her up she growls and hisses, which is unusual. I guess I'm calling the vet first thing in the morning.
