Hil, it sounded like one option you were considering was data analytics. The people I know who have migrated from mathematical psychology into data analytics work when they want and where they want. They solve problems and then hand the solutions to other to use on a routine basis. For them it is more flexible than academia.
Thanks. Yes, data analytics is one thing I'm considering, and the flexibility definitely seems like a plus.
And, in things I will not miss about teaching here (whether I end up teaching elsewhere or doing something else), my students had a midterm tonight, in a room with tiered seating and no rails on the stairs, and the eight students who raised their hands to ask questions during the exam were all sitting in the last two rows. So, eight times up and down those stairs. Three of the questions were "What's this number supposed to be?" (There were some weird issues with printing the exam, and that number wasn't too clear, but I'd told them before the test started, several times, that it was 8/3. After the third person asked, I made another "On problem 6, the first exponent is 8/3" announcement, and the two people whose hands had been up put their hands down.) Two of the other questions were "This thing that's printed perfectly clearly on the exam -- are you sure that's the equation it's supposed to be? Because I'd know the answer if it were this other equation."

As I expected, I can barely walk today. Definitely a good thing I told my students yesterday that classes were canceled today, and I'm just staying home and grading.
