Serious Eats did an amateur chemical analysis on halal cart "white sauce" once and determined that it's basically mayonnaise.

I would imagine it wouldn't take much chemical difference to taste very different. One of my dad's favorite stories from college is about the time they did spectroscopic analysis of good wine and bad wine to see if they could tell the difference - they could not.

(That's not really the point of the story as he tells it. When he went to the liquor store and explained what they were doing and asked for recommendations of wines to test, there was a lot of discussion about the good wines but no hesitation before Franzia was singled out for the bad)

Thank you! It did sound like a really interesting job, with more management responsibility and some pretty cool work. On the down side, the guy is hiring to have someone run the PDX office because he's moving back to the Twin Cities this summer. So it's kind of a no-go, although it was a very pleasant conversation.

But! The freaky thing is that he was particularly interested in my resume because he went to the same law school and undergrad school as me (and they are on opposite sides of the country!). And when he mentioned it, I said, "Yeah, I went to UMass, I grew up in Norfolk."

And he said, "No kidding! So did I!"

Yup. He grew up three miles away, went to the same high school, university, and law school. And he worked in the same place as a law clerk that I did when I was in law school.

So I think we'll probably keep in touch, even though I'm not going to go work for him right now. t grins
