It was what I learned between here and Jacques Pepin, just salt & thyme in the egg itself and cheese in the fold of the omelette (which I know he wouldn't do, but I like cheese). It was totally simple, just the technique that I've finally got down. The biggest hint was to leave it the fuck alone right at the start, and then get the egg cooking evenly with a fork. I made an almost flawless flip and fold today, and it was moist and nicely cooked.

I got some, but I need more. I have a couple of choices for today and this weekend, two of which involve making phone calls, and I suspect both of those are going to yield to inertia. I would make the one call for what I think I should be doing tonight (helping out with a church service down in the affected area) but I don't have the number of the guy. I have lots of ways to get that number, but don't feel motivated, partly because I don't actually want to go. I think I would be helpful, but I would be late and it would make for a very very long day, then driving up the hill in the storm at night.
Okay, now that I put it like that, in combination with being up last night, I'm not going to try. It probably will be an important day with helping people, but I can't do it. I won't be of any help if I wreck the Pilot coming back up the mountain at night. I'm not obligated to go, they don't even know I was considering it. I can start next week if I want.

Sounds perfect. Yeah, it's worth mastering the technique. We bow down to Jacques Pepin. Whenever I'm watching his omelette videos though I think "Where can I get chervil? What is chervil?"
I know, right? I don't know what chervil is either, but I think it shows up in my John Scheepers Kitchen Garden catalog, so I am tempted to try.
Okay, help me make the next decision! So this year I missed the BOW camp because of the cost, about $250 but I would have gotten to do four events, probably a shooting one and kayaking and some kind of orienteering. I had saved some money to go, but then blew it on going to the Chicago Blackhawks game instead, which was a good call since they're now out.
Anyway, the same group is doing a rifle marksmanship event this Sunday in Phoenix, and it's free! Only it starts at 9, four and a half hours away from me. And I would have to call to register, like today probably.
With everything that's happened, it seems like it might either be a) a fun diversion, b) a really tiring trip, c) something that takes me out of town just when I'm needed, d) something that gets me out of town to avoid being needed, or e) something that is a thing apart from the SO instead of doing something also fun and relaxing but together.
But which is it? Should I go?
