I think I'm going to have to agree with him here. "American," when it's used to include mac and cheese but not include tacos or knishes, is an ethnicity. It's not necessarily an ethnicity in the sense that you can say that specific people are part of it and other people aren't, but it's definitely a culture in the sense of having food, music, social norms, and so on.

That's what I'm saying -- that the group of people who do have a cultural heritage of mac and cheese (and hamburgers, etc.) ARE a cultural group. "American" might not be the best name for them, since it also means a bunch of other things, but it is a culture just as much as any other culture.
I don't know that culture is the same as ethnicity, though.
