I went to the store to get a brisket so that I could start the brine for corned beef this weekend. The only brisket that they had was pre-brined with a bunch of chemicals AND was $3.79 per pound. RIDICULOUS

For an early St. Pats celebration (by someone with no touch of Irish) I made beef bacon and cabbage. Corned Beef and Cabbages is Irish-American. Pork bacon and cabbage - that was traditional in Ireland. This was in between and it was delicious. I could explain my reasoning for the particular choice, but it would be TLDR.

Maria, that's a real weight off.

OMG, where did the baby go? And he's not even a toddler anymore, really. That is one handsome young man, there, bt. He's going to be fending off suitors right and left soon, if he isn't already.

Childcare informs us that he's popular with the girls there. He's certainly popular with the staff.

(Don't look too closely at the pics though. We gave him a haircut over the weekend, and for the most part he looks a lot better for it; but there are a couple of spots we did before realising the clippers were on 9mm instead of 12mm.

It's true, he really isn't a toddler anymore. He'll soon be three years old. He engages in dialogue, he has opinions, he's developing his own taste in music. (Some favourites: Kanye West's "Love Lockdown", Dido's "White Flag", "Do They Know It's Christmas (which he calls the Bell Song), Johnny Cash's cover of "Hurt" - seriously - and Waltzing Matilda, which he can sing himself. Oh, and he approves of any songs featuring "saxtophones".)

And I just love watching him take all these steps. Beautiful boy.
