Oh, and thanks for the Paleo rec, too. You'd think I'd have thought of that after recent discussion in Natter, but... I did not.

Paleo is useful for GF people, but if the GF people don't need or want to give up all grains, it's kind of limiting. But you can be sure the recipes don't have gluten in them, so there's that.

I see a lot of GF bloggers moving towards only grain-free baking with almond and/or coconut flour, which is nifty from a "vast sea of ingredients" perspective, but annoying from a "holy crap, almond flour is expensive!" perspective.

I'm oddly jealous of gluten-allergic people. In a totally unrealistic way, of course (munches on breakfast toast). Just, for a while there, I hoped it was to blame for some of my health issues. It would have been really hard for me to stick to, but at least it would have been a diagnosis. But the GF period didn't really make much difference to my symptoms.
