Sometimes the hardest part is the push to just START something and break the inertia.
So layer of tots, then black beans, then a poached egg, then sauteed mushrooms on top. Little bit of good salsa too.

I realized that when I make biscuits and (vegetarian) gravy, if I don't want to make the effort to make myself gluten-free biscuits, I can just have my gravy over tots! OMFG SO GOOD.
