Amy, the roasted cauliflower is NOM. I make it tossed in olive oil, a ton of garlic, a little pepper and kosher salt. Then I sprinkle parmasan cheese over it and roast at 425 for 20 minutes.
I am being so productive today! Unfortunately, productive tomorrow will need to involve shoveling shittons of heavy snow and digging out the car. In 5 degrees with wind chill of below 0. UGH UGH UGH.
Oh, well. At least today's productiveness means I can warm up with cocoa and fresh pumpkin cookies!

Hey, I have cauliflower! And mushrooms. How long do you roast them? I'd be worried about them drying out.
Mushrooms would go for about 10-12 minutes, I would think. I roast a whole chopped up head of cauli for about 20-25 minutes -- I like mine to be turning a little brown and crispy on top. Yum.
