Jilli, healthy thoughts your mom's way.

The version of posole I make is this: saute up a mess of onions, garlic, pepper, pinch cayenne maybe, green chile and an overabundance of oregano, add chopped up chicken and just lightly brown. Toss into vat of chicken broth and throw in some hominy. Simmer for a good while, so that hominy softens and chicken is falling apart. About halfway through, throw in some shredded corn tortillas, since they eventually melt and add nice flavor and are a thickener. Add salt and pepper or what else tastes good while burbling.

Good served plain or with a dollop of sour cream and lime.
