Mango butter? I only say that because I have peach butter (thanks Jess!) in the slow cooker as I type.
ETA: And that's only true because my amazing super actually went into my apt to turn the slow cooker on because I forgot to.

You could chunk and freeze the mango for use later in smoothies. (Cup full of frozen fruit, cup of milk, blend, drink. I love using frozen fruit because it means I don't need to mess about with ice.)
