Oh man. Poor T!

Cake directions: ground 1 cup of pistachios until you make a small grain meal, like coffee grounds. Combine with a cup of flour, 2 tsps of baking powder, 1/2 tsp of nutmeg, 1/2 tsp of cinnamon, 1/4 tsp of salt. In a separate bowl, cream 1 cup of sugar, 1 stick of butter, 3 eggs, 1 tsp of vanilla. Combine the wet and the dry ingredients into a batter.

Pour the batter into a greased and floured 10 inch cake pan or a 9 x 9 pan. Place halved and seed apricots or apples (and a friend from high school mentioned cherries would be yum) on the batter. Spoon honey into the centers of the fruit. Bake for 35-40 minutes at 350.

The fruit will drop into the batter due the weight and the cake will inter the fruit when it rises.

Serve with a sprinkling of powdered sugar or perhaps a honey butter glaze?

totally yum. More like a quick bread than cake. even sarameg who is sweet averse might like it.

SIL ended up crying in front of the dr & nurse. She doesn't do that. He's got fluid in both ears (they've been taking him to the dr for every.damn.cold and it isn't clearing up) and apparently can't hear out of the right. Left is iffy. She's freaking out over the dev. delays it could cause, I'm telling her that once that gets cleared up, them & the big brother will make up for that and if not? Well, at least they are poor, CHIPS will cover speech pathologists. How fucked up is that?

She's still at MY BABY freakout phase though. But I've sent her to bed, need to do the same for me. Fuck, it's late.

sarameg, I'm sorry she's so upset. Perhaps once they get the ear infections cleared up, his hearing will return. My cousin had that problem but he grew up (with speech therapy) and had no lasting problems with his hearing.
