If you cut them while they're raw, there's much less mess, but they're also harder to cut.
Ok, thanks. I've only ever cut cooked beets and imagined that raw ones would be messier.

I actually cut and cooked regular red beets last night. I peel them with a vegetable peeler then slice them when raw. They are hard and kind of hard to cut. I use a plastic cutting board so it won't stain my wood one. And I wear an apron so I don't stain my clothes. My hands wash easily enough.
I had s nightmare last night that I had lost most of my hair (and worst, was only suddenly realizing it, somehow--like I still had hair on the sides of my head but when I looked at the top realized it was so thin I had big bald spots. Scary!!)
Sounds like your subconscious was reacting to being in your new place. You have most of your stuff, but it's not unpacked and in its proper places, ergo, you have "bald spots."
Or perhaps not.
Otherwise, how was the first night in the new place?
IIRC, one of the Top Chef eps had a beet slaw that looked really good. My favorite local restaurant makes a kickass "spicy beets" dish that is julienned beets in a vinegar-based marinade which are really yummy (they make a similar "spicy carrots" dish which is spicier; nearly burnt out my tastebuds when I went there with my dad a few weeks ago).
Man, I love beets. I should cook them more at home.
I've been putting beets in our juicer! Beet, carrot, orange = DELICIOUS!
I am really annoyed that, when I type information into Google about children born abroad becoming US citizens, all I get is pages and pages of birther/Obama is secretly Kenyan crap.
How to peel beets: [link]
I always just used a fork to hold cooked beets and peeled them with a knife. Less mess for me.
Ugh, got waked up in the wee hours this morning by a mouse scampering across me while I slept. Hope he enjoys the nice lethal spring-loaded traps I'm going to be festooning my apartment with tonight, since the humane catch-and-release one doesn't suit his taste.
I need airline info. I'm going to New York in May and I'm trying to decide between a non-stop on JetBlue or a one stop on Virgin America that's about fifty bucks less, but requires 7AM flights on both ends.
Normally, I'd jump right on the JetBlue, because I've flown them before and like them a lot, and you know, NONSTOP, however, I keep hearing how fab Virgin America is. And aren't they the ones with the on board WiFi these days?
HALP?
