It could be that just one or two more items could get you through most cooking situations.
That's why I suggested the Pyrex. I own two Pyrex (8x8, 9x13) and 1 cookie sheet. They last forever and these 3 items meet all my oven needs.
I also own 1 muffin tin and 2 madeleine tins, but I rarely use them.
Yeah, the 8x8 Pyrex would be good for anything (smallish) that you want to put in the oven, really.
I have a bigger one, and use it for anything from roasting chickens to making brownies. Useful!
You can also use the pyrex to make brownies, which are a very easy bachelor food: add water and oil to the mix and bake.
And 7 layer dip for parties! and tuna casserole and enchiladas...
I'll second Megan's rec on the pyrex pans and the cookie sheet. Cookie sheets have many more uses than just cookies. They make a good oven platform for things that might spill.

It was a perfect day for going outside: Sunny, 30 degrees and no wind at all.
The kids and I put on our gear and went to the park where we spent an hour rolling around in the snow, sliding, swinging and digging in the "snow box."

You don't HAVE to have corn bread with chili. I never make it with chili because I am lazy and figure that I've already made ONE thing; I'm not making two. (Despite the fact that "making" chili is just opening cans and such, emptying them into the crock pot, stirring well, and then putting the lid on and walking away.)
Making one new thing (i.e., the chili) is enough for you for one meal, I think. For people who love to cook, they can make all kinds of new shit and revel in it. But I don't try more than one new thing at any given meal, since I am not one of those people who loves to cook.
Although the box of Jiffy corn bread IS really easy to make. And if you have a bread loaf pan, you can make all kinds of stuff and impress people (like beer bread -- 3 ingredients, easy-peasy, and people will be like, "Man, you can BAKE?!?").
