Only beets I've ever encountered are red pickled beets and I don't like 'em. I'm very tempted by the CSA where I can pick out my own stuff. We'll see (for next year.) I'm going through 1/2lb of spinach a week (and this week might be more,) and once tomatoes come into season, I can easily go through a couple pints of cherry and grape varieties...I live off greens, tomatoes and chicken salads in the summer. Hell, I live off them even in the winter. My diet may be rather repetitive, but tasty. Tonight's dinner was the beef empanada and a spinach, strawberry, tomato and gorgonzola salad in that nummy asian dressing.

...I've got to figure out how to make springroll filling to stuff in croissant pastry. It's nearly been a year since Kath, and still...I want.

The tree outside my kitchen window (on the other side of the alley) was just pink bulbs when I left this morning. It's exploding with pinkish white blossoms now. Love. I don't know what it is. Not pear, not cherry. Apple?

I like vegetables, but there's no way I could handle a CSA. Although I suppose I could take some of them to my folks' house on the weekend, and cook for them.

I needed to eat vegetables last night and it was pouring so I didn't want to shop. Happily there was most of a head of savoy cabbage in the fridge, and a couple of sweet potatoes. So I cut up the sweet potatoes and roasted them in the oven, and Mark Bittman told me to saute the cabbage with olive oil and balsamic vinegar, and it turned out excellent.

Would that all vegetable dishes were so easy!

WHEE! And today a good half of what will be my moving boxes left my house.

also, YAY pink trees!

Did I mention that I have an Oleander in my yard and also a Pecan tree? Cause I do. Can;t wait to find out what colors the Oleander and the Crepes are.

Also Also? The have already started building the wall to close in the porch. YAY!

Last also? mac, despite being a pill all day and just contrary, did let me read to him and did go to sleep in his own bed. Perhaps we are back to sleeping in our own rooms now.

Speaking of helpful Buffistas, back in the dawn of time when I had the Project From Hell and was constantly working late late late (sometimes over night), and JZ still lived in Berkeley, she went to my house one night and let my dog out and fed him, because my sister was out of town and I just couldn't get home.

Buffista help gets passed around, and eventually it comes back.

K-Bug and I went shopping this evening. At David's Bridal. We looked at bridesmaid dresses. I tried on a couple of Mother of the Bride dresses. Oh, and we bought her wedding dress.

The wedding will be next summer, somewhere in Colorado. She is looking for a place to have an outdoor ceremony and inside reception.

Did I mention that we bought a wedding dress? And tiara. And veil.
