One drop of truffle oil is all you need in a HUGE DISH.
My 2 good friends/fellow-OBOD-druids are vegetarians, and Kaleb is an EXCELLENT cook. They've been nursing the same tiiiiiny bottle of truffle oil for, like, 5 years.
It's totally overwhelming if overused. And easy to overuse.
And can turn a very MEH tempeh dish into I WILL EAT IT ALL NOM NOM NOM.

I had some truffle fries in Seattle that were pretty good.
You infuse a mild oil (like corn) with truffles, much in the same manner you use to make infused vodka.

And truffle oil doesn't make things taste like truffles. It makes them taste like truffle oil.
My favorite restaurant in NYC serves a truffled egg toast (made with truffle oil) that is TO DIE FOR, but it's an exception rather than the rule.
Truffle oil in salad dressing? EW EW EW. GET IT OFF.
