One question about the enchilada recipe - what is "prepared taco sauce"? (I know this sounds snotty, but I'm dead serious. I have never heard of this product and am trying to imagine what it is. Is it tomato sauce with chili powder, basically?)

Pretty much, yeah. It's usually smooth like canned tomato sauce, but some brands have a few bits of onions and peppers mixed in.
